Super Veggie Pizza

Who loves a good pizza but hates the feeling after enjoying a big greasy slice of pizza? With this recipe you can enjoy a big slice (or two) GUILT FREE! Sometimes I love to add meatless meals into our diet just because I love veggies and am not too crazy about most meat. Upgrade your next family pizza making night or just personal pizza craving night with this super yummy pizza that everyone can enjoy making & eating!

Ingredients-

  • 3 Gluten free pre-baked thin pizza crust (I used the Schar brand) or thin cauliflower crust
  • All natural tomato pizza sauce ( I used the classico brand)
  • Basil pesto ( I used the classico brand)
  • 3-4 0z Spinach
  • 1/4 cup sliced mushrooms
  • 2-3 sliced tomatoes
  • 3/4 lb. of low-fat fresh mozzerella (3 slices per pizza) (I used the galbani brand)
  • 3-4 small sections of italian parsley
  • Fresh capers ( I used the walmart brand)

Prep time: 8-10 minutes

Cooking time: 15 minutes

Total: 23-25 minutes

Instructions-

  1. Preheat oven to 410 degrees
  2. Grease pizza stone with olive oil as needed
  3. Wash and slice all veggies
  4. Spread 1-2 tsp of basil pesto on pizza crust
  5. Cook crust ALONE for 3-5 minutes (keep a close eye on the crust – only pre-bake for crispiness)
  6. Remove crust from oven
  7. In a bowl mix 1/4 cup tomato sauce with 3-4 tsp of basil pesto – spread this mix on one pizza crust. Repeat mixing & spreading for EACH crust. ** makes a hearty & flavorful sauce**
  8. Place 3-4 slices of cheese on crust – spread out evenly
  9. Add spinach, tomatoes, mushrooms and italian parsley as needed on each crust ** use heavy portions they will cook down**
  10. Cook for 12-13 minutes
  11. Take out pizza and add 1 tsp of basil pesto & capers as needed
  12. Put pizza on broil in oven for 1 minute — TIME MAY VARY SO KEEP A CLOSE EYE ON THE PIZZA
  13. Remove pizza, let cool & ENJOY
